An old fashioned cut of pork from the shoulder. Unlike its counter part from the other half of the shoulder, this is leaner and sweeter.
Stunning when slow roasted over a bed of apple and onion with cider. Falls apart when cooked for long enough.
Cook on 160 degrees for 4 hours or so. The rich meat juices help make a fantastic silky gravy.
