Hand of Pork is from the knuckle ½ of shoulder and much the same as rolled spare rib only this cut has been prepared leaving the central bone to help maintain extra sweetness when slow cooking on a bed of apples and onions with apple juice or cider.
This is a great way of not only producing mouth-watering sweet pork & tasty crackling but as an extra benefit when cooking this pork it produces a sweet gravy when blitzing everything from the bottom of the roasting tin.
